Weekend Waffles

What better to do after a weekend of grueling painting than to go on a 2 week vacation?

And what better way to celebrate the beginning of said vacation than to eat a delicious breakfast?

So I made waffles.

My Memaw gave me a waffle iron for Christmas a few years ago (I have found out that if you don’t tell Memaw what to get you then you end up with toe socks and foul smelling body lotions or a child’s devotional book).

But I haven’t really given it the use it deserves–until now.

Here’s how I make delicious, easy waffles.

Ingredients:

  • 2 eggs
  • 2 cups of all-purpose flour
  • 1 3/4 cups of milk
  • 1/2 a cup of vegetable oil
  • a tablespoon of white sugar
  • 4 teaspoons of  baking powder
  • 1/4 teaspoon of salt
  • 2 teaspoons of vanilla

First heat up your waffle iron.

Now grab the eggs.

Crack them into a bowl–

–and use a hand mixer to beat them until fluffy.

El Guapo still doesn’t have any mixing instruments (electric mixer, a whisk, anything), so I used a fork.

Now add the flour.

And the milk.

And the oil.

And the sugar, baking powder, and salt.

Then the vanilla.

Now use your mixing utensil and combine it all.

Since I was forking it took a little extra effort.

Now grease the hot waffle iron. I like to use a butter/cooking spray combo. I butter it on the bottom, try to spread as much of the butter around to the top irons, and then do a quick spray to cover any missed bases.

Once buttered/oiled, scoop some batter into each iron.

If you overfill, this will happen.

Not the end of the world. But a bit of a wasted waffle.

Be sure you don’t open the iron until you’re pretty sure it’s at least partially cooked. If it’s not, you could damage the waffle.

El Guapo prefers his with whipped cream and berries. You can do whatever you want.
