Pumpkin Cream Cheese Spread

Still have a few rogue cans of pumpkin hanging around after the holidays?

But if you’re feeling the way I am, you’re a little worn out from all the muffins, breads, and pies that usually feature pumpkin as the star ingredient.

But.

I have a confession:

I love cream cheese.

So much that I will smear it on practically anything.

Toast, bagels, crackers, chicken, biscuits, hell, I’d smear it on your arm and lick it off.

I love it.

But sometimes you want to jazz up a favorite. Not obscure it altogether (like when you add bacon to….anything), but make it sing like a little birdie of sweet flavor.

So here’s another great recipe from Ezra Pound Cake!

It’s incredibly easy and makes a pumpkin spread waaaay better than anything you’ll find at the store or a bagel shop like Panera.

I even found myself using my finger to scrape the sides of the bowl.

Totally rude. But no one saw me.

Ok, first thing to do is soften the cream cheese. This can be accomplished 2 ways:

  1. let it sit out for an hour or two
  2. microwave in 15 second intervals

If you’re like me and didn’t plan ahead you might want to take Option 2.

In the bowl with the cream cheese, add 1/2 cup of pumpkin,

with the cream cheese

Add 1 teaspoon of vanilla,

a 1/4 cup of light brown sugar,

and the spices: 1-ish teaspoons of cinnamon, 3-4 shakes of nutmeg, 2 shakes of allspice, and a shake of ginger.

Then break out the faithful hand mixer and go to town on it.

Once mixed, you’re done.

Now smear it on a Triscuit or your arm.
