Momma’s Broccoli Cheese Casserole

One thing that didn’t change for me was how much I loved broccoli.

I always got really, really excited when Mom would make Broccoli Cheese Casserole.

I still make this casserole because it’s so damn good.

And easy.

So here’s how to make a nugget of my childhood.

Steam 3 heads of broccoli.

I’ve found that if you don’t have a steamer, then a piece of a deep fryer works just fine.

While the broccoli is steaming, combine the rest of the stuff in a bowl.

Dump a can of a “cream of” into the bowl. I used cream of chicken here because I didn’t have anything else, but cream of mushroom is my favorite for this casserole.

Add 1/4 cup of mayonnaise,

and 2 eggs.

plus 2 eggs

Then add the cheese. Lots and lots of cheese.

Well, it’s actually 2 cups of shredded cheddar. But it looks like a lot.

with cheese, please

Sprinkle in some s & p while you’re at it.

When the broccoli is done, add it to the goop.


Mix it all up into a gushy mush.

Pour it into a greased, square casserole dish.

Add a sleeve of crushed Ritz crackers.

If you’re feeling dangerous,  drizzle some butter on top, too.

ready to bake

Then bake at 350 until the crackers are brown, about 30 minutes.


Eat straight out of the dish with a fork.

      Oh, it’s great. It’s one of the defining dishes of my childhood and is now my go-to casserole as an adult.
