Pumpkin-Apple Streusel Squares

Sometimes, when you take two things and mix them up together you get something marvelous.

Like when the Glee Troubletones killed a mashup of two Adele songs.

Come on. Really.

This time, however, the marriage of pumpkin and apple is a match made in heaven.

Make this dish, and your guests will be in awe. Plus you’ll be able to use up some of that extra canned pumpkin you’ve got lying around. It’s almost spring! You really need to use up that pumpkin.

First you want to prepare the apple topping. Begin by getting out 2 large (or 3 medium) apples.

If you have Granny Smith apples, use them. I didn’t so I went with Golden Delicious.

Peel, core, and chop the apples. I take the easy route and use this handy fella:

It really makes it easy to peel apples this way.

Cut to a small dice.

Heat about a tablespoon of butter in a sauté pan.

When it’s melted, add the apples.

After they’ve cooked for a couple of minutes, add a few spoonfuls of brown sugar.

If you’re stuck on measuring, it’s probably about 3 Tablespoons.

Add a few good shakes of cinnamon, too.

This is probably about 2 or 3 teaspoons, but actually….I have no idea. Just make it look tasty.

Give it all a good stir, and cook until the apples are soft.

While that’s simmering, combine the following in a stand mixer or a food processor:

1 1/2 cups AP flour,

1 cup brown sugar,

and 1/2- 3/4 teaspoon of salt (I just pinch and throw).

Chop 3/4 stick of cold butter into cubes.

Add it to the bowl/processor along with about an ounce of cold cream cheese.

Mix it up or pulse in the food processor until it resembles coarse cornmeal.

Reserve about a half a cup. This is the streusel topping.

Now for the good stuff!

In a separate bowl, add 1/2 cup sour cream & 1 cup pumpkin,

2 Tablespoons sugar, plus 1 teaspoon baking soda,

and a Tablespoon total of the following (you choose how much of what):

  • cinnamon
  • cloves
  • nutmeg
  • allspice
  • ginger

Give the whole gloppy thing a good mix.

Now gently incorporate the gloppy mixture into the dry flour/butter mixture, stirring the whole time.

Add 2 eggs, stir in gently. You really don’t want to over mix the baking soda or it will make the end result tough.

Pour into your pan of choice.

Because Earth Momma is incredible and knows my fascination with all things square, she got me a pan of square shapes.

Now I can make square muffins, square mini cakes, square cornbread, and yes, square Pumpkin-Apple Streusel.

Okay, so pour the batter into your pan.

Have the apples handy.

Evenly divide the apples on top of the batter.

Now sprinkle the reserved streusel topping on the apples. If you’re feeling extra crazy mix in a tidge of cinnamon.

Okay, now bake at 350 until a toothpick inserted comes out clean. Usually around 1 hour.

    I saw that pan and immediately grabbed two so we could share square baked goods and revel in another of our shared weirnesses.
